Second new restaurant review in 2020 featuring LIBERTA! A contemporary Italian cuisine in a modern industrial interior. We somewhat got that warm South American ambience for some reasons probably because of the red bricks on the wall. They are located at former Cassis Kitchen restaurant at Pavillion Arcade, Sudirman (across Citywalk). Liberta opened on last December 2019 and right away became one of the most talked about new restaurants in town.
Complimentary welcome bread for every dining customers
We started with Guanciale Pizza (135k) - Truffle white sauce with 40 days dry aged pork cheeck, caramelized onion, mozzarella cheese and half cooked egg in the middle. The thin pizza is basically very simple, but the intense truffle flavor lifts up our appetite. The thin dry aged pork adds salty flavor while the raw egg yolk in the middle balances the salty flavor.
Veal Tartare Crostino (110k) - veal tartare aka raw veal mixed with tonnato sauce, which is white creamy sauce with a hint of spicy, on top of grilled sordough. This is something new to us, although we've had beef tartare before, but the combination of veal tartare and sordough is unique.
Bone Marrow Spinach Spaetzle (120k) - Spaetzle is a unique pasta pan roasted to create crunchy texture. Then later mixed with salty soft bone marrow and herbed breadcrumbs & age balsamic sauce creating salty crunchy pasta experience. This is good as a shared menu for tasting because portion wise it was quite petite.
Truffle Ricotta Ravioli with Egg Yolk Center (120k) - 3 pcs ravioli stuffed with omega 3 raw egg yolk, ricotta & parmesan cheese, then drizzled with butter sage sauce. Once cut open, the egg yolk explodes making the ravioli creamy yet giving cheesy flavor. I would suggest you to share this with your couple instead of having it as a 'main course'.
Wagyu MB5+ Rump Steak - pre-cut steak with sauteed spinach and potato wedges. Love the saltiness and smokiness of the outer layer of the steak. The steak itself wasn't the most tender one, it was juicy indeed but still need some chewing effort which for some might be suitable. Medium raw could probably give a more tender texture.
Strawberry Rhubarb Souffle (95k) - strawberry rhubarb crumble souffle with creme anglaise and homemade tangerine gelato. The souffle was warm and super soft with mild to less sweet. The yellow milky cream comes as an optional sweetener (but not a condensed milk), while the sweet gelato complements the warm souffle (you knoe when warm meets cold).
Though Liberta is meant to be an Italian restaurant, we found that the restaurant serves Italian cuisines with a twist (or we just haven't explored a different part of Italian?). The majority of foods here are good to share for couple, thus ordering 3 - 4 menus is recommended. Pasta menus here are probably their strongest point as many of them are unlike anywhere else.
